Mason Jar Strawberry Shortcake

This Mason Jar, Strawberry Shortcake is a vintage recipe and made with love. With all the colors and flavors of “Love” this is sure to be a Valentine’s Day hit or a rustic and refreshing addition to top off any meal. We break down a quick made option below with homemade whipped cream that lends a sense of luxury to the crunch of the biscuit and the pop of the fresh strawberry. All pulled together and served in a cute mason jar. Come on, what’s cuter than that? 

In true Base Camp fashion, we had to pair this dessert with the perfect bubbly! We highly recommend you fill your flutes with the Pacific Northwest, family owned Treveri Cellars sparkling wine. All their sparkling wine options are an affordable option to purchase more and share with the ones you love. We loved the Blanc de Noirs! 

Ingredients:

Strawberries:

  • 4 cups strawberries 
  • ¼ cup of sugar 

Biscuits:

  • 2 ⅓ cup Bisquick 
  • ½ cup milk 
  • 3 Tbs sugar 
  • 3 Tbs melted butter 

For Whipped Cream:

  • 1 cup chilled whipping cream 
  • ¼ cup powdered sugar 
  • ½ tsp vanilla extract

DIRECTIONS: 

Preheat the oven to 450 Degrees Fahrenheit. 

Biscuits:

In a medium bowl, stir the Bisquick mix, 2/3 cup milk, mix well till a dough forms. Using an ice cream scooper, drop dough onto an ungreased cookie sheet, or on parchment paper lined cookie sheet. Bake biscuits for 10 to 12 minutes or until golden brown. 

Strawberries: 

Be sure to slice your strawberries and place them in the fridge to cool. This preserves their freshness. 

Whipped Cream:

In a small bowl, beat 1 cup chilled whipping cream and ½ teaspoon vanilla extract with a mixer on high speed until soft peaks form. Place whipped cream in the fridge to chill until ready to serve. Base Camp recommendation: vanilla bean paste is a delicious substitution for vanilla extract if you want more of the vanilla notes in your whipped cream. 

We recommend Heilala vanilla bean paste.

Assembling your Mason Jar Strawberry Shortcake:

After biscuits are out of the oven and cooled enough to touch, slice in halves. 

NOTE: We made a quick version of homemade strawberry shortcake, but if you find yourself with more time on your hands, we will link the “from scratch” version here.

Place bottom half at the base of the mason jar and start layering, alternating with strawberries and whipped cream. Top with the top part of the biscuit and Enjoy!
