Urban Orchard: Tarte

We love the rustic feel and ease of baking  a simple apple tarte as life continues to steal time from each day, especially with kids being back in school.

Fall is here and this recipe calls for the perfect amount of sugar and spice. Cinnamon is the quintessential ingredient to Fall as it warms with each bite but can be added to cakes, coffee, oatmeal, etc.

A tarte can be as scientific as you want although, the crust does not need to rise like a batter and has the opportunity to be forgiving. Need extra apples, toss with some additional sugar. Thinking about adding another fruit, do it! Want to finish the crust with a glaze, honey or egg wash for a bit of extra sparkle, just make sure to add that prior to baking.

While pastry creation is a science, we choose to grab a gluten free, organic pie crust from our favorite local Natural Food store, Winter Ridge Food Market. This way we speed things up but we are still assured that the end result will be an organic farm to table masterpiece for all to enjoy.

Don’t get us wrong, when time is alloted it is great to take the time in the kitchen to whip out all of the ingredients and finesse them to be an easy, unforgettable dish for all to enjoy. 

We chose a Tarte to feature because of its versatility and beauty. It can take minutes to pull together and is a wonderful after school snack. The apples are rustic, charming and can provide such technical texture within the presentation.

Ingredients for Rustic Tarte:

Filling:

  •  1/2 lemon
  •  4-5 medium pink lady apples
  •  1/8 cup granulated sugar
  • 2 tablespoons of Brown sugar
  •  1 1/2 tablespoons cold unsalted butter, cut into very small pieces
  •  1 teaspoon ground cinnamon

Glaze:

  •  1/3-1/2 cup apricot jelly (or substitute another variety)
  •  water

Directions:

  • Roughly cut all of your apples into ½ inch cubes and put them into a medium size bowl with all other ingredients. Stir till mixed evenly and add to pie crust. Bake at 350 degrees for 30 mins or till the crust is golden brown. 
  • Remove from the oven and add your glaze prior to cooling so that it crisps to desired consistency. Serve to your liking with our favorite Vanilla Ice Cream Linked above.
